Crockpot Cooking

I am working on a detailed menu plan based solely on the crockpot! I have one month’s worth of menus completed and have most of the shopping list already done. I have requested more whole foods type recipes from the ladies on the T2CHK message forum and they’ve provided me with some wonderful recipes to add to my collection. However, I don’t quite have it all pulled together into the finished format I’d like before presenting it to everyone, so bear with me a bit longer as I work on it as I have spare time (which is well…. spare! LOL). In another week, I will be having a whole week off from daycare babies, and while I do have doctor’s appointments scheduled every single day – I will have some free time to work on this project.

Why Crockpot Cooking? Well, with me running the daycare, a very part-time web design business, having a husband, three children still at home, three dogs, two kittens, co-leading a ministry message forum and trying to keep up with blogging and mentoring responsibilities – if I don’t put something in the crockpot in the morning, I will find myself at 5:30 staring in the fridge or pantry wondering what in the world I’m going to fix and far too often will pick up the phone and order take-out! Since my favorite thing to make for dinner is reservations – this isn’t a problem for me personally, but it is a bit hard on the budget. So, the crockpot is one kitchen helper I’m all too happy to put to good use.

It seems everyone these days is busy! Since crockpot cooking has really been a blessing to my family, I thought I would share some of my favorite recipes, and those contributed by others, and pull it together in an organized fashion to help other busy moms get a home cooked meal on the table, with minimal effort and maximum taste and nutrition.

So stay tuned around Labor Day 2007 for my Crockpot Cooking menu plan. :)
