I know I have posted about this site before, but it bears repeating – I just love this site! Their recipe search by ingredient has saved my bacon (:)) more than once when I needed a recipe for supper, using what I have on hand.
For example: tomorrow, I want to make something with pork chops and potatoes. My hubby is a meat and potatoes kinda guy, so that’s what I need to fix.
So I popped over to Allrecipes.com and did a search for recipes using those ingredients. How easy is that!!
I also love Quick Cooking Magazine. I subscribed to this for several years, and let my subscription lapse a year or more ago; as I have stacks of these magazines and have not nearly prepared all the recipes they contain. However, I always love most of what I find in there. I may just subscribe again because the recipes are that good! The fact that they are quick and easy suits me very well. [I don't care for cooking much, but since we do like to eat, it's a necessity. LOL]
Because it’s going to be 95 degrees tomorrow, I decided to pass on anything that required the oven. So here’s what we’re having.
Pork Chop and Potato Casserole
8 pork chops
8 large baking potatoes, peeled and sliced
2 cans cream of mushroom soup, undiluted
Brown the pork chops in a little oil. Add potatoes and soup. Cover and cook for 45 minutes, or until the potatoes and chops are fully cooked.
Easy-peasy!
I’ll serve this with my tomato-cucumber-artichoke salad and perhaps some vanilla ice cream for dessert. YUM!
Tomato Cucumber Artichoke Salad
1-2 large slicing tomatoes, diced
2 cucumbers, peeled and sliced
1 jar marinated artichokes (oil included)
Parmesean cheese, grated
Italian salad dressing
Toss tomatoes, cucumbers and artichokes (with oil marinade) in a large bowl, sprinkle liberally with Parmesean cheese and pour about 1/4 – 1/2 cup of Italian dressing over and chill well before serving.
