Yum!  I made this the other night.  Huge hit!

Easy Shepherd’s Pie 

2 lbs ground beef

1/2 cup onion, chopped

2 cloves garlic, minced

2 cans black beans, drained

2 cups co-jack cheese, shredded

6 cups mashed potatoes

Preheat oven to 350.  Brown ground beef in large skillet with onions and garlic, until beef is done.  Drain.  Spread beef mixture in bottom of 9×13 pan.  Top with black beans and sprinkle with cheese.  Spread mashed potatoes evenly over cheese.   Bake, uncovered, in 350 oven for 35 minutes or until heated through and potatoes are slightly browned.   Serve with salad.
